Ingredients:
- 500 grams mixed dried fruits
- 75 grams walnuts (3/4 cup)
- 125 grams almond flour/meal (1 1/4 cups)
- 67 grams coconut flour (1/2 cup)
- 1/2 tsp bicarb soda
- 1/2 tsp salt
- 3 tsp mixed spice
- 1 tsp ground cinnamon
- 5 eggs
- 50 grams butter melted (1/4 cup)
- 1 tbsp vanilla extract
- 60 mL orange juice
GLAZE (OPTIONAL)
- 2 tbsp honey
- 2 tbsp orange juice
Directions:
- Start by preheating your oven to 150°C. Now it's time to gather all the ingredients and get started. In a large bowl, combine the mixed dried fruits, chopped walnuts, almond flour, coconut flour, bicarb soda, salt, mixed spice, and cinnamon. Mix everything together well.
- In another bowl, whisk together eggs, orange juice, melted butter or coconut oil, and vanilla extract. Combine the wet and dry mixtures together and stir well until everything is combined.
- Pour the mixture into a greased 22cm cake tin and bake for 50-60 minutes, or until the top is golden brown and a skewer comes out clean when inserted into the cake. Allow it to cool for 10 minutes in the pan before removing it and placing it on a wire rack to cool completely.
- If you want to add a glaze to your fruitcake, you can whisk together honey (or any other liquid sweetener) and amaretto to create a glaze. Brush it over the top of your cooled fruitcake and let it set.
- Congratulations, you now have a delicious and healthy Christmas fruitcake! It's perfect for those who want to indulge in a sweet treat while still watching their calorie intake.
