So, when you're seeking a little comfort and warmth, this recipe will be your go-to!

  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 1/2 teaspoon crushed red pepper flakes
  • 3 large carrots, peeled and chopped
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 2 teaspoons dried basil
  • 3 cans whole peeled tomatoes, undrained
  • 1 container chicken stock
  • 2 tablespoons tomato paste
  • 3 teaspoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup heavy whipping cream (optional)
  • Toppings: Sliced fresh basil leaves and grated cheese (optional)

  1. Heat the olive oil, butter, and red pepper flakes in a large pot or Dutch oven until the butter is melted.
  2. Add the chopped carrots and onion to the pot and stir frequently over medium heat until the vegetables are softened (about 5-10 minutes).
  3. Mix in the minced garlic and dried basil and continue to cook for another minute.
  4. Add the canned tomatoes, chicken stock, tomato paste, sugar, salt, and pepper to the pot. Stir well to combine all the ingredients.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered so the flavors can meld together (about 20-25 minutes).
  6. Once cooked, remove the pot from the heat. Blend the soup in batches until smooth using a blender.
  7. If desired, slowly stir in the heavy cream, making sure to stir continuously to incorporate it. Return the pot to the stove to heat the soup through.
  8. Serve the soup hot, topped with fresh basil and Parmesan cheese if desired.

Health benefits:

Tomatoes are packed with vitamins A and C, folic acid, and beneficial compounds like lycopene, choline, and beta-carotene that contribute to heart health, improved vision, and potentially cancer prevention. Carrots add a boost of fiber, vitamin K1, beta-carotene, and antioxidants, while onions provide vitamin C and flavonoids, beneficial for reducing inflammation and boosting immune function.

Soup texture tips:

For a smoother and creamier texture, try adding sour cream or Greek yogurt instead of heavy cream. If you prefer chunky soup, blend only half of the soup and mix it back into the pot. Remember, soup flavors intensify the longer it simmer, so feel free to adjust the spices to your liking.

This heartwarming tomato soup is the perfect remedy for cold winter days. Its robust flavors and comforting warmth make it a popular choice for family dinners or cozy nights in. Celebrate National Soup Month this January by trying out this delicious recipe and sharing it with your loved ones. Enjoy!
