Ingredients:
  • 3 tablespoons olive oil
  • 3 tablespoons butter

  • 3 large carrots, peeled and chopped

  • 2 garlic cloves, minced
  • 2 teaspoons dried basil
  • 3 cans whole peeled tomatoes, undrained
  • 1 container chicken stock
  • 2 tablespoons tomato paste
  • 3 teaspoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup heavy whipping cream (optional)
  • Toppings: Sliced fresh basil leaves and grated cheese (optional)

 

 

Directions:
  1. Heat the olive oil, butter, and red pepper flakes in a large pot or Dutch oven until the butter is melted.
  2. Add the chopped carrots and onion to the pot and stir frequently over medium heat until the vegetables are softened (about 5-10 minutes).
  3. Mix in the minced garlic and dried basil and continue to cook for another minute.
  4. Add the canned tomatoes, chicken stock, tomato paste, sugar, salt, and pepper to the pot. Stir well to combine all the ingredients.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered so the flavors can meld together (about 20-25 minutes).
  6. Once cooked, remove the pot from the heat. Blend the soup in batches until smooth using a blender.
  7. If desired, slowly stir in the heavy cream, making sure to stir continuously to incorporate it. Return the pot to the stove to heat the soup through.
  8. Serve the soup hot, topped with fresh basil and Parmesan cheese if desired.
