Ingredients 
  • 2 slices of bread 
  • 4 slices cucumber
  • 2 medium avocados, peeled and sliced
  • 2 handfuls of fresh baby spinach leaves
  • 1 tablespoon vegan or regular cream cheese (Tofu Cream Cheese works great for a vegan option!)
  • Salt and pepper to taste 



Instructions
  1. Start by lightly toasting your two slices of bread in a pan over medium heat until they are golden brown on both sides.
  2. Spread a tablespoon of cream cheese on each slice of toast – either vegan or regular is fine! Then top with the cucumber slices.
  3. Arrange the sliced avocados on one slice of toast and top with the baby spinach leaves. Sprinkle it with salt and pepper as desired. 
  4. Top off with the other slice of toast and repeat! You can cut it into triangles or eat as-is; either way you’re sure to enjoy this delicious sandwich!
